Our Cavallucci. The gastronomic journey through the Marche has been always been surprising us because every area, often every town, has its flavors and its traditional recipes. Today we talk of cavallucci (horses), so called because with their shape reminiscent of the back and the legs of a horse. They are sweet typical of the winter period, in the past the women began to prepare at San Martino, that is, when you could find the new wine, and then continued production throughout the cold season. The dough recipe, handed down from mother to daughter, from generation to generation contains sapa (or boiled must), dried figs, candied fruits, raisins, chocolate, nuts, almonds, grated orange, coffee and bread crumbs. Ingredients for 5 persons:
- For the filling:
- Sapa 300 grams
- Shelled walnuts. 100 grams
- Shelled almonds 100 grams
- Shelled hazelnuts 100 grams
- Raisins or candied or dried figs 50 grams
- Liqueur to taste: anise, vermouth or marsala for raisins
- Chocolate powder 50 grams
- Grated rind of an orange or a lemon
- 3 cup of coffee
- Sugar 150 grams
- Breadcrumbs 50 grams
- For the pastry:
- Flour 1 kilograms
- Sugar 200 grams
- Seed oil 2 cups
- 1 teaspoon vanilla extract
- Baking powder 1/2 teaspoon
- White wine heated with sugar
- To decorate:
- Powdered sugar to taste
- Sugar to taste
- Alkermes to taste
Essential ingredients:
- Sapa of Terre di San Ginesio
- Cocoa powder classic
- Italian Espresso ground coffee of Caffe del Faro
Preparation:
Soak the raisins with the liqueur of choice: anisette, vermouth or marsala (you can also use dried figs or candied). After that, grid walnuts, almonds and hazelnuts, combine them with the sugar, the zest of orange or lemon, chocolate, coffee, previously prepared, the bread crumbs and sapa. Mix everything in a bowl and put them in the refrigerator. We advise you to prepare the dough the night before, so the ingredients will amalgamate even better.
We prepare a fountain with the flour, baking powder and vanilla, then join the other liquids: oil seeds and wine previously heated with sugar. Remember to cool the wine before mixing with the other ingredients. Work the dough for ten minutes, then stretch it and prepare rectangles of a few millimeters in height. Divide the dough for the topping and insert it above each rectangle. Close well rectangles giving them the shapes of a horse, close the edges with a fork. Carry out the cuts with scissors above the horses, before baking.
Take a baking sheet and bake at 180 degrees for 20-25 minutes. Add icing sugar and granulated sugar or alchermes.
