  • 6 Eggs>
  • 100 grams of Pancetta
  • A clove of garlic
  • 500 grams of cauliflower broccoli
  • Extra Virgin Olive Oil
  • Salt to taste

Preparation:

Bring to boiling salted water, cook the broccoli for about 10 minutes. Cut pancetta into slices and then into strips and sauté for a few minutes in a pan with three tablespoon of extra virgin olive oil and a clove of garlic until they become golden brown. Remove the garlic and add the broccoli to season them a couple of minutes. Break the eggs into a large bowl, add a pinch of salt, to taste a bit of fresh parsley, beat well with a fork. Stir in the eggs with broccoli and pancetta, mix well so that all the mixture is evenly distributed, sauté over low heat on one side, turn the omelet and also on the other side, until it is golden brown, serve optional warm or cold.
