Our Chickpeas Salad and Carrots.The salads of legumes are really a perfect solution for a healthy diet, rich in vegetable protein and low in fat. The chickpeas are ideal to be prepared in salads. Try this salad with chickpeas and carrots, delicious in its simplicity.

Ingredients for 5 people:

  • 500 grams of Quercia chickpeas
  • 3 Carrots
  • Extra virgin olive oil
  • Salt to taste

Preparation:

Soak the chickpeas at least 12 hours in cold water; add half a teaspoon of baking soda to soften them. Boil them in salted water for about an hour, then drain them and pass them under cold water. Wash the carrots and cut into thin strips, add the chickpeas and put it in a salad bowl, season with a pinch of salt and organic extra virgin olive oil, adding to pleasure, sunflower seeds.
