- 500 grams of Quercia chickpeas
- 3 Carrots
- Extra virgin olive oil
- Salt to taste
- Quercia Chickpeas of Azienda Agricola Medei
- Organic Extra Vergin Olive Oil Oleificio Silvestri
- Optional: Sunfower seeds
Soak the chickpeas at least 12 hours in cold water; add half a teaspoon of baking soda to soften them. Boil them in salted water for about an hour, then drain them and pass them under cold water. Wash the carrots and cut into thin strips, add the chickpeas and put it in a salad bowl, season with a pinch of salt and organic extra virgin olive oil, adding to pleasure, sunflower seeds.
