Our Fava Bean Soup. The peeled fava bean are a great way to enjoy this particular legume throughout the year; in Marche Region there are high quality fava beans, the ones coming from Fratte Rosa. That’s why our fava beans soup tough very simple has a unique and inimitable flavour.
Ingredients for 5 people:
- 500 grams of peeled fava beans
- Half an onion
- Two thick slices of bread cut into cubes
- Extra Virgin Olive Oil
- Salt to taste
Essential Ingredients:
- Peeled Fava Beans of Fratte Rosa of I Lubachi
- Tenero Ascolano Extra Virgin Olive Oil of Oleificio Silvestri
- Optional: Medium Hard Pecorino
Preparation:
Wash the beans and put them to soak in cold water 24 hours before cooking. Finely chop the onion, place in a large pot with 4 generous tablespoons of extra virgin olive oil, let it dry and when it reaches a nice golden colour add the beans, drained and plenty of warm water, add salt, bring to a boil and cook for about two hours by covering the pot with a lid. If necessary, add hot water to maintain the proper density, because the beans at the end of the cooking time will be becoming a sort of cream. Meanwhile, toast the bread cubes on a non-stick pan with a little oil. Transfer to bowls or soup bowls, add the diced bread warm, drizzle with a good drizzle of extra virgin olive oil and serve immediately, adding cheese to taste.

Fava beans are also excellent as side dish, just restrict it so that it has the consistency of a puree, it will be perfect alongside a roast or two good slices of cheese.
