Our Mashed Fava Beans with Bitter Herbs.Typical ingredient of the farming families of the past, the fava beans are a valuable and healthy food, especially when the product quality is unquestionable. Try this mashed fava beans with bitter herbs, it will become one of your favourite dishes.
Ingredients for 5 people:
- 500 grams of peeled fava beans
- 300 grams of boiled bitter herbs, such as chicory
- Half an onion
- A clove of garlic
- Extra virgin olive oil
- Salt to taste
Essential Ingredients:
- Peeled Fava Beans of Fratte Rosa of I Lubachi – garlic and wild fennel (or oregano and chilli)
- Extra Virgin Olive Oil of Oleificio Silvestri
- Optional: Hard Pecorino Cheese
Preparation:
Soak fava beans in cold water for 24 hours. Finely chop the onion, place in a large pot with 4 generous tablespoons of extra virgin olive oil. When it reaches a nice golden color add the fava beans, and warm water, add salt to taste, bring to boil and cook on slow heat for about two hours by covering the pot with a lid. Blend fava beans to have mash tun. Meanwhile, put the garlic in a pan with a little oil, sauté and add the bitter herbs, cook for a couple of minutes. Place the mashed fava beans to the pot, add the herbs and, as desired, Hard Pecorino Cheese shaves.
