Our Fava Beans Cream with Pecorino Cheese and Pine Nuts. Fava beans, a wonderful legume consumed since ancient times, are a valuable and healthy foodstuff: nutritious and low in calories, rich in minerals and fiber, excellent for preparing countless recipes. The fava beans of Fratte Rosa are one of the best qualities and we will want to propose this wonderful cream with pecorino cheese and pine nuts, you will be conquered!

Ingredients for 5 people:

  • 500 gr of Peeled Fava Beans
  • 2 cloves of garlic
  • 150 grams of Medium Hard Pecorino Cheese
  • 15 grams of Pine Nuts
  • Extra virgin olive oil

Preparation:

Soak fava beans in cold water for 12 hours. Chop the garlic, place in a large pot with 4 generous tablespoons of extra virgin olive oil, cook for a minute, add drained fava beans and pour warm water, add salt, bring to boil and allow to simmer for about two hours by covering the pot with a lid. If necessary, add hot water to maintain the proper density, because the fava beans at the end of the cooking time will becoming a sort of cream. Chop the cheese into cubes and toasted pine nuts. Pour soup dishes or bowls, add the diced cheese and toasted pine nuts, season with a good drizzle of extra virgin olive oil and serve immediately, add warm croutons to taste.
