Ingredients for 5 people:

  • 500 grams of Quercia Chickpeas
  • 1 Small onion
  • 1 Boiled potato
  • Grated bread
  • Extra virgin olive oil
  • 1 Egg
  • Salt to taste

Preparation:

Soak the chickpeas at least 12 hours in cold water, add half a teaspoon of baking soda to soften them. Boil them in salted water for about an hour. Meanwhile, in a saucepan, heat 6 tablespoons of extra virgin olive oil and let us fry the finely chopped onion. Add the drained chickpeas and cook for a couple of minutes, add the boiled potatoes and mix everything in a blender, adding, to taste fresh parsley. Beat an egg, add the mixture, add a pinch of salt and mix well. Shape into small balls, pass the bread crumbs and then cook in a preheated oven at 180 degrees for about 20 minutes.
