Cream of Chickpeas with garlic croutons
Our Cream of chickpeas with garlic croutons. It’s really easy to follow an healthy and tasty diet when you have the right ingredients, such as Quercia chickpeas. Our grandmothers knew, when they used them to make wonderful soups and we know today that we propose them in a refined and tasty variant, a cream with garlic croutons that will make you lose your head!
Ingredients for 5 people:
- 500 grams of dry Quercia chickpea
- 2 garlic clove
- Bread baguette
- Extra virgin olive oil
- Salt to taste
Soak the chickpeas at least 12 hours in cold water, add half a teaspoon of baking soda to soften them. Wash the chickpeas from the water to soak and boil them in salted water for about an hour. Meanwhile, heat in a saucepan 6 tablespoons of extra virgin olive oil and saute a clove of garlic and, as desired, a sprig of rosemary. Add the drain chickpeas in the pan and cook for a few minutes. Remove the garlic and rosemary, then pureed the chickpeas with an immersion blender. Cut the bread, toast it for a few minutes, then flavored with garlic. Transfer the soup on plates, add the toasted garlic bread and a drizzle of extra virgin olive oil and serve.
