Our Nostri Fava Bean Flour Pasta “Tacconi” with zucchini. Tacconi is a traditional pasta of our hinterland, a kind of pasta that is deeply linked with the rural tradition. We present it with a seasoning of excellence: some tender zucchini season. So why do we not delight ourselves with a tasty and light meal?
Ingredients for 4 people:
- 250 gr Fava Bean Flour Pasta “Tacconi”
- 2 zucchini
- 50 gr diced bacon
- 3-4 tablespoons of Extra Virgin Olive Oil
- A clove of fresh onion
- Salt and pepper to taste
Essential ingredients:
- Fava Bean Flour Pasta Tacconi “I Lubachi”
- Bacon made by “Country pig”
- Optional: A sprinkling of Parmesan or Pecorino cheese
Preparation:
Preparare delle zucchine trifolate, con olio di oliva, cipolla a pezzetti e sale. Lasciarle appassire in padella a fuoco basso e con il coperchio in modo che si ammorbidiscono durante la cottura (circa 35-40 minuti).
Prepare the zucchini sautéing them with olive oil, chopped onion and salt. Let them dry in a pan over low heat with the lid so that they soften during cooking (about 35-40 minutes).
When the zucchini are almost come to cooking, put a saucepan with plenty water and as soon as it boils, pour the Tacconi pasta and cook them for 3 minutes (no more).
While you are cooking the pasta, in those 3 minutes, in another large skillet, sauté bacon with olive oil and pour the zucchini over high heat. As soon as the pasta is cooked, drain it and transfer it to the pan where are still frying the zucchini, gently sauté it again in a frying pan stirring with a fork for a minute.
Serve immediately, adding Parmesan or pecorino cheese to taste.

Tacconi Pasta, thanks to its fava bean flour, it is a high protein food. It will be enough to season it with a simply vegetable sauce in order to have a full meal, also from a nutritional point of view.
