Ingredients for 5 people:
- 500 grams of Quercia chickpeas
- 200 grams of cooked and peeled shrimp
- A bunch of arugula
- Extra virgin olive oil
- Salt to taste
Soak the chickpeas at least 12 hours in cold water; add half a teaspoon of baking soda to soften them. Boil them in salted water for about an hour, then drain them and pass them under cold water. Wash and clean the arugula, transfer the chickpeas, arugula and shrimps in a salad bowl, season with a pinch of salt and organic extra virgin olive oil, add to taste sunflower seeds.
The chickpeas in a salad can become an excellent solution for the original buffet dinners; try them with tomatoes and green olives, a true ode to the goodness of the Mediterranean diet.
