Tasting Marche Blog

In the Marche Region there is not Easter without the traditional Pizza with Cheese. Tasting Marche prepare a soft and fragrant pizza using our pecorino cheeses. Try it… and you will want immediately another portion.

Time: 4 Hours and 30 minutes
Difficulty: Elaborated

Ingredients for two pizzas:

  • 25 g of yeast
  • 150 gr of parmesan cheese
  • 150 gr of Medium Hard Pecorino of Sibillini Mountains
  • 1 glass of warm milk
  • 6 teaspoons of extra virgin olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of ground nutmeg
  • 200 gr Caciotta diced (or other soft cheese)
  • 4 eggs
  • 500 gr of 0 flour

Preparation:

Dissolve the yeast in warm milk, add extra virgin olive oil and all the flour melted with salt pepper and nutmeg. Add the whole eggs and knead with your hands gradually incorporating the grated parmesan cheese and Hard pecorino cheese to made an elastic dough. Add also the caciotta cheese cubes. Once the dough become homogeneous, divide it into two balls. Let the two balls rise for about 3 hours in the baking trays. Cook the two balls in a 170 degrees preheated oven for about 1 hour.

Our advice:

The traditional pizza with cheese is peppery and flavourful , the caciotta diced could also be replaced with one of Tasting Marche’s pecorino cheeses… with herbs , pepper or with truffle!
