Strozzapreti alla Carrettiera. Tasting Marche wants to propose the most classic recipe of the sauce “Carrettiera”, with a few simple ingredients, ones that will make Strozzapreti a very special dish!
Ingredients for 5 people:
- 500 grams of Egg Strozzapreti
- Tomato Purè
- 2 cloves of garlic
- Extra Virgin Olive Oil
- 2 fresh chilli peppers
- Salt to taste
- Fresh basil
- Egg Strozzapreti “La pasta di Celiano”
- Tomato Pure of I Sapori dei Monti
- Tenero Ascolano Extra Virgin Olive Oil of Oleificio Silvestri.
- Optional: Pecorino cheese shavings
Bring salted water to boil and prepare a mixture of garlic, basil and chilli peppers. Meanwhile in a large pan heat 6 tablespoons of Tenero Ascolano Extra Virgin Olive Oil and the mixture; after a minute, add the tomato purée, salt to taste and cook for a few minutes. Cook Strozzapreti for 12 minutes (not more), drain and pour into the pan with the sauce, sauté them for about a minute over low heat. Finally add some shaves of pecorino cheese to taste.

To prepare this sauce garlic is essential; you can also add some other garlic gloves than the recipe, it is important that you remove the green interior thread; it will be easier to digest!
