THE DESSERT OF WINTER IN THE MARCHE: THE CAVALLUCCI
Our Cavallucci. The gastronomic journey through the Marche has been always been surprising us because every area, often every town, has its flavors and its traditional recipes. Today we talk of cavallucci (horses), so called because with their shape reminiscent of the back and the legs of a horse. They are sweet typical of the winter period, in the past the women began to prepare at San Martino, that is, when you could find the new wine, and then continued production throughout the cold season. The dough recipe, handed down from mother to daughter, from generation to generation contains sapa (or boiled must), dried figs, candied fruits, raisins, chocolate, nuts, almonds, grated orange, coffee and bread crumbs.
